
A good friend of mine asked me to make cookies for her. And then she said, “snicker doodles”. And I died a little bit. Technically there is nothing wrong with a snicker doodle. Basically it’s a sugar cookie rolled in cinnamon and sugar. I’ve never had a snicker doodle that was worth my time. And then there was Martha. In Martha Stewart’s cookie book, she has an exceedingly simple recipe for snicker doodles. I substituted the AP flour with bread flour and added a splash of vanilla. The cookies baked up tall and fluffy with a chewy center. The cinnamon and sugar on the exterior gave a subtle hint of sweet spice. The recipe only made 17 cookies. (After sampling: 15 cookies. Quality control is dramatically under-rated.)
